Garlic Chicken with Spinach


  • 1 lb chicken breast, sliced
  • 2 cloves garlic
  • 2 Tbsp olive oil
  • 1/2 cup white wine
  • 1/2 cup or more chopped sweet red peppers
  • 1/2 cup or more chopped spinach
  • 1/2 cup or more shredded carrots
  • 1/4 tsp onion powder
  • 1/4 tsp parsley
  • salt and pepper to taste


  1. Heat oil in a large skillet. Add garlic and fry for 2 min.
  2. Add chicken and sprinkle with onion, parsley, salt and pepper. Cook until no longer pink.
  3. Add peppers, carrot and spinach and fry for another minute or so.
  4. Add wine and simmer for a few minutes.
  5. Serve over pasta, rice or try it over my Basic Microwave Risotto recipe.
